Depending upon our location, around 9 pm each evening a slate of culinary shows begins, including America\u2019s Test Kitchen, aka \u201cThe Guy with the Bow Tie.\u201d<\/p>\n<p><a href=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-art.jpg\"><img loading=\"lazy\" class=\"alignright size-medium wp-image-468\" src=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-art-300x193.jpg\" alt=\"Chicken art\" width=\"300\" height=\"193\" srcset=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-art-300x193.jpg 300w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-art.jpg 450w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>Recently one ATK segment included a recipe for \u201cWeeknight Roast Chicken.\u201d Yes, we agree there are as many ways to roast chicken as there are to cook grits. But, surprisingly, the kitchen pros came upon this roasting revelation when they were unaware that the power to the oven went kablooey. The result was a perfectly roasted chicken, with an incredibly moist breast.<\/p>\n<p>The technique: Preheat the oven with a 12\u201d iron skillet placed inside.<\/p>\n<p>The science:\u00a0\u00a0 The skillet, along with the oven, is hot and when the thigh hits the pan it has a head start on the breast, resulting in reduced cooking time.<\/p>\n<p><a href=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-with-squash.jpg\"><img loading=\"lazy\" class=\"alignleft wp-image-461 size-medium\" src=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-with-squash-300x187.jpg\" alt=\"Chicken with squash\" width=\"300\" height=\"187\" srcset=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-with-squash-300x187.jpg 300w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Chicken-with-squash-1024x638.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>Our action plan:\u00a0\u00a0 Prepare the chicken for the oven and remove as much of the skin and fat as possible (your discretion), then baste with olive oil, salt, pepper and Costco\u2019s organic non-salt seasoning.<\/p>\n<p><a href=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Inside-Breast.jpg\"><img loading=\"lazy\" class=\"alignleft wp-image-462 size-medium\" src=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Inside-Breast-300x169.jpg\" alt=\"Inside Breast\" width=\"300\" height=\"169\" srcset=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Inside-Breast-300x169.jpg 300w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Inside-Breast-1024x577.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>When the oven temperature reaches 450\u00b0, place the chicken with the breast side up into the skillet and return the pan to the oven. After about 30 minutes, check the temperature, and when the breast registers 120\u00b0 or thigh 140\u00b0, simply turn off the oven. That\u2019s right\u2014<strong>turn off the oven<\/strong> and continue roasting for approximately 30 minutes or until the breast temps at 160\u00b0 and the thigh 175\u00b0.<\/p>\n<p>Next, remove the chicken to a carving board and place under a foil tent for another 20 minutes to allow the juices to reintegrate. After that, carve and marvel at the perfect bird.<\/p>\n<p><a href=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Delicata.jpg\"><img loading=\"lazy\" class=\"alignright wp-image-469 size-medium\" src=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Delicata-214x300.jpg\" alt=\"Delicata\" width=\"214\" height=\"300\" srcset=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Delicata-214x300.jpg 214w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Delicata-730x1024.jpg 730w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Delicata.jpg 1076w\" sizes=\"(max-width: 214px) 100vw, 214px\" \/><\/a>A stuffed delicata squash was our chosen pairing for this delectable chicken. If you have never tasted a delicata, get ready for a treat. Also known as a \u201csweet potato squash\u201d it tastes like a marriage of the orange tuberous root and a butternut squash. This is one winter gourd that doesn\u2019t need to be peeled making preparation a heck of a lot easier than all the others.\u00a0\u00a0We cut the delicata in half lengthwise, basted with a wee bit of olive oil, salt and pepper, popped it into the toaster oven cut side down on parchment, and baked for 30 minutes at 350\u00b0 or until a knife easily poked through the skin.<\/p>\n<p>While the squash was roasting, we saut\u00e9ed onion and celery, adding leftover sprouted rice and quinoa, toasted almonds, Zante currents, and seasoned to taste. Stuffing the squash with the mixture, and topping with Asiago cheese, the delicata was returned to the toaster oven for another 30 minutes\u00a0then added\u00a0the cheese\u00a0for melting.\u00a0 Of course, you can stuff with any of your favorite ingredients.<\/p>\n<p><a href=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Plate-1.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-463 size-large\" src=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Plate-1-1024x577.jpg\" alt=\"Plate 1\" width=\"500\" height=\"281\" srcset=\"http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Plate-1-1024x577.jpg 1024w, http:\/\/tipsytable.com\/wp-content\/uploads\/2014\/10\/Plate-1-300x169.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>A pomegranate balsamic and olive oil vinaigrette dressed our greens, and we scattered fresh pomegranate seeds over the plate for a wonderful and bright and\u00a0tasty spritz with each bite.<\/p>\n<p>Wow, just like the Cook\u2019s Country chefs proclaimed, the breast was deliciously moist, and our ad-hoc pairings from the fridge sublime.
